Pindang patin khas palembang
Bahan :
* 2 ekor patin di potong jadi 8
* Jeruk nipis
* 2 Batang serai
* 1 ruas lengkuas di geprek
* 2 lembar daun salam
* 3 lmbr daun jeruk
* seikat daun kemangi
* 1 buah nanas kecil
* 1 buah tomat (optional)
Bumbu halus :
* 6siung bamer& 3 siung baput
* 1 ruas jahe
* 1 ruas kunyit
* cabe sesuai selera
* Garam, gula, minyak, air secukupnya
Cara memasak :
-cuci ikan patin kemudian di lumuri dengan perasan jeruk nipis, diamkan kurleb 10mnt, cuci bersih
-Tumis bumbu halus hingga harum, kemudian masukkan Sereh, lengkuas, daun jeruk dan daun salam. Kemudian tambahkan air, masukkan garam dan gula, cek rasa.
-Kalau sudah mendidih masukan patin, kemudian terakhir masukkan nanas dan daun kemangi masak sampai matang..

Salah satu kebudayaan yang begitu kaya dan terkenal di masing-masing daerah yaitu wisata kuliner masakan khas Tradisional. Kita ketahui Masing-masing daerah juga memiliki makanan khas tradisional dan memiliki ciri khas yang begitu berbeda di setiap daerah masing-masing,dan rasanya yang begitu nikmat membuat kita ingin terus mencicipi nya. Tapi buat anda tidak perlu khawatir bagi pecinta masakan nusantara ,karena saya akan membantu anda untuk membuat masakan tradisional tersebut,dengan memberitahukan resep dan cara membuatnya.
Kali ini saya sebagai koki yang menyukai makanan khas Tradisional akan memperkenalkan satu makanan yang begitu khas di daerah Bandung . Makanan ini sangat populer di kalangan masyarakat bandung ,baik itu di kalangan dewasa,remaja,dan anak-anak.
Saya akan meberikan satu resep makanan dan cara membuatnya,agar para pecinta makanan khas tradisional bisa membuat nya di rumah agar bisa di cicipi oleh keluarga anda. Makanan Khas Tradisional SEGO CAWUK KHAS BANYUWANGI.
SEGO CAWUK KHAS BANYUWANGI.
Langkah-langkahnya adalah :
* Kukus ikan teri dengan bantuan daun pisang, sampai matang dan tata dalam wadah
Buat karamel terlebih dahulu dengan cara menggoreng gula tanpa minyak.
* Jika gula sudah cair seperti karamel, tambahkan air. Kemudian beri irisan belimbing wuluh, wadung, garam, dan penyedap rasa sesuai selera. Biarkan kuah tersebut mendidih dan matang. Setelah kuah matang, tuangkan kuah ke dalam wadah yang sudah berisi ikan teri.
* Haluskan bawang merah, bawang putih, cabe besar, cabe kecil, kacang goring. Semua bahan-bahan di goreng sampai matang.
Masukan parutan kelapa, tambahkan air dan masukkan irisan mentimun yang dirajang kecil-kecil. Aduk sampai rata, dan tunggu sampai semua bahan matang, dan taruh dalam wadah yang telah disiapkan.
Untuk membuat sambal dengan cara haluskan cabe kecil, garam, gula, dan tambahkan penyedap rasa, setelah halus tempatkan di wadah yang sudah di sediakan.
* Nah, jika semua masakan tersebut sudah siap, anda tinggal menyiapkan nasi di dalam piring sesuai porsi anda, dan guyurkan acar mentimun, kuah ikan teri, dan jangan lupa untuk memberi sambal. Gulai Siput khas Tanjung Pinang
Bahan gulai siput khas Tanjung Pinang :
* 1/2 kg Siput
* 1/4 kg terung Asam
* Santan
Bumbu :
* 5 buah lado kutu alias cabe rawit
* 7 buah cabe merah
* 1 sendok teh halio (jahe)
* 1/2 sendok teh lengkuas
* 3 ulas bawang merah
* 1 ulas bawangputih
* 1 helai daun limau
* 1 helai daun kunyit
* 1 helai daun salam
* 2 helai daun kunyit
* garam secukupnya
Cara Membuat gulai siput :
Potong bagian ekor siput yang runcing agar mudah nantinya untuk disedot, lalu Siput direbus.
Belah menjadi dua terung asam lalu buang bijinya
Haluskan seluruh bumbu kecuali daun asam,daun limau dan daun kunyit.
Masukkan bumbu halus,daun asam,daun limau dan daun kunyit kedalam santan lalu masak hingga mendidih.
masukkan terung asam dan siput lalu masak hingga siput dirasa matang dan jangan lupa tambahkan garam secukupnya.
hidangkan dalam keadaan panas atau hangat-hangat dan gulai siput siap disantap.

- Bahan Utama Untuk Membuat Resep Daging Rendang Asli Padang :
* 1.5 kg daging
* 2 liter santan dari 2 butir kelapa tua
Bumbu dan Rempah Untuk Membuat Rendang Minang Asli :
* 2 batang daun serai, memarkan
* 4 lembar daun jeruk purut
* 2 cm asam kandis/gelugur
* 2 lembar daun kunyit, simpulkan
- Bumbu Resep Rendang Padang Asli Minang yang harus kamu Dihaluskan :
* 5 butir kemiri
* 6 siung bawang putih
* 100 g cabe merah besar
* 12 butir bawang merah
* 100 g cabe merah keriting
* 2 cm jahe, bakar
* 2 cm lengkuas
* 3 cm kunyit, bakar
* 1/2 sdm ketumbar
* 2 sdt garam
* 1/2 sdt pala
* 1 sdt jintan, sangrai
* Penyedap rasa secukupnya
- Cara Mengolah Resep Rendang Padang Asli khas Minang :
Pertama tama olah daging yang sudah disiapkan, potong-potong daging rendang dengan bentuk dadu atau seukuran yang diinginkan, hanya saja jangan pernah memotong daging terlalu kecil untuk diolah menjadi rendang agar saat dimasak nanti daging tidak hancur.
Tuangkan santan ke wajan berukuran besar, masukkan pula serai, irisan bawang merah, asam dan daun kunyit. Aduk-aduk hingga santan mendidih dan pastikan santan yang anda masak tidak pecah, untuk itu Anda harus terus mengaduk-aduk santan hingga mendidih merata.
Setelah santan mendidih, masukkan perlahan bumbu yang telah dihaluskan kedalamnya dan sesekali aduk-aduk selama kurang lebih 20 – 30 menit.
Setelah anda melihat santan tampak berminyak, berarti ini saatnya kamu memasukan potongan daging rendang yang telah dibersihkan dan masak dengan menggunakan api kecil/sedang hingga santan mengental dan mengering serta bumbu meresap ke pori pori daging.
Terus masak hingga daging empuk dan matang merata, jangan lengah untuk terus diaduk-aduk agar bagian dasar tidak gosong.

Petai Masak Ebi Tauco.
Bahanya:
- 5 papan petai. Kupas
- 3 sdm ebi. Tumbuk
- 3 sdm tauco
- 2 lembar daun salam
- 2 btg serai geprak
Garam dn gula secukupnya
Bumbu Halus:
- 7 biji cabe merah kriting
- 5 biji bwg merah
- 3 biji bwg putih
- 2 biji tomat
Cara Memasak
- Tumis bumbu halus sampai wangi. Masukan jg serai dn daun salam. Aduk2 rata.
- Masukan tauco dan ebi. Masukan jg petai garam dn gula aduk2.
- Masak sebentar lalu angkat.

Bahanya:
- 5 papan petai. Kupas
- 3 sdm ebi. Tumbuk

Bumbu Halus:
- 7 biji cabe merah kriting

Cara Memasak
- Tumis bumbu halus sampai wangi. Masukan jg serai dn daun salam. Aduk2 rata.
- Masukan tauco dan ebi. Masukan jg petai garam dn gula aduk2.
- Masak sebentar lalu angkat.

Tumis Cumi Cabe Hijau.
Bahan-bahan :
* 1/4 kg Cumi Asin / Basah (aku pake yg asin terus di rebus)
* 12 buah cabe rawit merah pedas
* 15 buah cabe Hijau Besar
* 5 siung bawang putih
* 5 siung bawang merah
* 1 buah bawang bombay
* 2 lembar daun salam
* 1 iris jari lengkuas
* 1/2 iris jari jahe
* 1 batang daun bawang
* secukupnya Garam
* secukupnya Sasa
* secukupnya Royco
* secukupnya Gula
* Minyak goreng untuk numis
Langkah atau cara membuatnya :
Potong halus bawang merah, putih, bombay, cabe rawit, hijau, daun bawang
Cumi asin nya sebelum di masak, di masak rebus dulu 3menit biar ga asin,pakai cumi basah juga bisa,lalu angkat cuci di air bersih, lalu di potong kecil kecil
Panaskan minyak, masukan potongan bawang merah, putih dan bombay tumis sampai harum,masukan cabe hijau dan rawit pedas,masukan lengkuas dan jahe yg sudh di geprek dan daun salam, masukan juga daun bawang
Setelah bumbu Harum masukan irisan cumi,masukan garam gula sasa royco sampai rasanya pas, tumis sampai cumi matang, angkat dan hidangkan.

Sate Daging Bumbu Kuning.
Sate Daging Bumbu Kuning
Bahan:
* 300 gram Daging Sapi iris
* santan
* 2 sdm gula merah
* 2 sdt air asam
* serai & daun jeruk
Bumbu yang di haluskan :
* 7 Bawang merah
* 5 Bawang putih
* 2 sendok makan ketumbar
* 2 sendok teh merica
* 2 sendok teh jintan
* 4 kemiri
* 2 sendok teh kunyit bubuk
* 3 cm Laos
* 3 cm Jahe
* 5 buah cabe merah
* 5 buah cabe rawit
* garam secukupnya
Cara Membuat :
* Tumis semua bumbu yang dihaluskan tadi lalu masukkan gula merah, serai dan daun jeruk.Masak sampai baunya beraroma harum.
* Masukkan daging yang sudah dipotong bentuk dadu-kotak, lalu tuangkan 1 kaleng santan. Masak sampai daging empuk.
* Tunggu agak dingin, baru ditusuk ke tusukan sate lalu bakar.
* Hidangkan sate tadi dengan menambahkan sisa bumbu tadi.

* 1/2 fruit of shredded coconut
* Lime leaves

* Salt
* Sugar
* Flavoring ( if liked)
* 500 ml water
* Oil for frying
How to make :
Wash clean the duck cut puree garlic, coriander, ginger, and turmeric. cook above heat duck, shredded coconut, along with spice paste, add lime leaves, salt, sugar and flavoring. Cook until water runs out and dry. Fried duck in Ungkep all coconut, until color truns brownish. Duck prepared in serve with hot rice, chili sauce.
Fresh vegetables complement the tomatoes sauce :
* 3 large red chilies
* red cayenne pepper according to taste
* Brown sugar
* Terasi salt
* Tomato
How to make :
Blend all the ingredients, heat the frying pan with a little oil, put all the ingredients finely, has been given a little water and cook until water runs out and the sauce dries up.
